1 c. hard cooked egg, chopped
1 c. cooked carrots, finely diced
1 c. cooked peas
1 c. cucumber, peeled and finely diced
1 c. spring onions, finely diced
4 c. potatoes, boiled and mashed
Salt to taste
1 tsp. black pepper
4 T. mayonnaise

Green olives (optional)

Toss egg, peas, carrots, cucumber and spring onion in a serving bowl.  Add potatoes and toss well.  Add salt and pepper.  Mix in mayonnaise.  Chill.  Decorate with olives before serving.

Best made a day ahead.
